Propylene glycol (PG) is a small molecule organic compound with the chemical formula C3H8O2. It is a colorless, odorless, low-toxicity viscous liquid under normal conditions, which has the characteristics of water absorption and good stability. Propylene glycol molecule contains a chiral carbon atom, usually exists in the form of a racemate, with easy hygroscopicity and viscosity. Propylene glycol is highly soluble and reactive and can participate in a wide range of chemical reactions. For example, under heating conditions (in the presence of acids), propylene glycol can undergo a pinacol rearrangement to form acetone; it reacts with aldehydes and ketones to form acetals (ketones) catalyzed by acids, which are often used to protect the carbonyl and aldehyde groups; in addition, it can be oxidized to pyruvic and acetic acids by periodic acid and lead acetate.
