Citric acid anhydrous is an important organic acid, chemically known as citric acid, with the molecular formula C6H8O7, a colorless crystal, odorless, with a strong acidic taste, and easily soluble in water. Chemical Properties
Anhydrous citric acid has a melting point of 153-159°C, a boiling point of 248.08°C, a density of 1.542, and a refractive index of 1.493~1.509. It loses water and becomes anhydrous when heated to 40-50°C or in dry air.
